Irish   -   Lentil And Bacon Broth   adapted from Irish Food & Folklore by Clare Connery

Ingredients
  • 2 Pounds Ham -- Cubed
  • 6 Ounces Red Lentils
  • 2 Large Onion -- Chopped
  • 2 Large Carrots -- Chopped
  • 1 Medium Turnip -- Chopped
  • 3 Large Potatoes -- Chopped
  • 3 Tablespoons Parsley -- Chopped
  • Salt And Pepper -- To Taste
  • 6 Cups Chicken Broth
Directions Bring ham, lentils, onions, carrots and turnips to a boil in the broth. Simmer for 30 minutes. Add potatoes and simmer for 15 minutes. Add parsley. Simmer for 3 minutes. Season with salt and pepper and serve.
