Ingredients
  • 1 Medium Onion -- Chopped
  • 1 Stalk Celery -- Chopped
  • 1 Medium Carrot -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 3 Tablespoons Olive Oil
  • 6 Stalks Swiss Chard -- Chopped
  • 2 Cans Tomatoes -- Chopped
  • 1 Medium Jalapeno -- Chopped
  • 4 Medium Eggs
  • 1 Cup Romano Cheese
  • 4 Cups Chicken Broth
Directions Saute onions, celery, carrots and garlic in oil until onion is browned. Add chard, tomatoes and jalapeno. Saute for 5 minutes. Add broth and simmer for 20 minutes. Whisk in eggs. Simmer for 5 minutes. Do not boil Serve sprinkled with cheese.
