Italian   -   Arista Alla Florentina (Florentine Roast Pork)   adapted from Culinaria Italy

  • 3 Pounds Pork Roast -- Whole
  • 2 Cloves Garlic -- Chopped
  • 1 Teaspoon Rosemary -- Chopped
  • Salt And Pepper -- To Taste
  • Olive Oil
  • 2 Pounds Potates -- In Large Pieces
Directions Mix garlic with rosemary, salt and pepper. Rub mixture into roast. Sprinkle with olive oil and roast in 350 degree oven for 1 hour and 20 minutes. Baste frequently. Add potatoes around the roast and bake for another 30 minutes. Slice up the roast and serve.
