Italian   -   Basil Rice Soup   adapted from Betty Crocker Italian Cooking

Ingredients
  • 4 Cloves Garlic
  • 2 Stalks Celery -- chopped
  • 1 Med Onion -- chopped
  • 1 Med Carrot -- chopped
  • 1/4 Cup Basil -- chopped
  • 1/4 Cup Olive Oil
  • 3/4 Cup Rice
  • 4 Small Tomatoes -- chopped
  • 4 Cups Vegetable Broth
  • 1 Cup Water
  • Salt -- to taste
  • 1/2 Teaspoon Pepper
  • 1/4 Cup Romano Cheese -- grated
Directions Cover and cook garlic, celery, onion, carrot and basil in 4 qt dutch oven over med-low heat, for 10 minutes.
Stir in rice and tomatoes.
Cook uncovered, over medium heat for 5 minutes, stirring occasionally.
Add remaining ingredients except cheese.
Heat to boiling, reduce heat, cover and simmer 20 minutes or until rice is tender.
Top each serving with cheese.
Serves 6
