Ingredients
  • 1 Tablespoon Olive Oil
  • 1 Medium Yellow Onion -- diced
  • 1 Small Zucchini -- diced
  • 2 Stalks Celery -- chopped
  • 8 Large Mushrooms -- sliced
  • 4 Cloves Garlic -- chopped
  • 4 Medium Beets -- diced
  • 1 Large White Potato -- unpeeled and diced
  • 6 Cups Water
  • 1 Tablespoon Basil
  • 1 Tablespoon Oregano
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Red Pepper Flakes
  • 1/2 Cup Small Shell Pasta -- uncooked
  • 1 Can Tomato Paste
  • 1 Can Cannellini Beans
  • 2 Cups Beet Greens -- chopped
  • 1/4 Cup Parmesan Cheese -- grated
Directions saute onion, zucchini, celery, mushrooms and garlis in olive oil for 7 minutes. add beet, potato, water and seasonings. simmer for 30 minutes over medium heat stirring occasionally. stir in pasta, tomato paste, beans and greens. simmer 15 minutes til pasta is aldente and beets are tender. let sit 10 minutes before serving. Top with parmesan cheese.
