Italian   -   Bruschetta With Creamy Cheese Spread   adapted from Vegetarian Times magazine

  • 8 Slices French Bread Loaf -- toasted
  • 1/2 Cup Ricotta Cheese -- fat free
  • 2 Tablespoons Cream Cheese -- fat free
  • 2 Tablespoons Nonfat Yogurt
  • 2 Tablespoons Parmesan Cheese -- grated
  • 2 Medium Scallions -- finely chopped
  • 1 Small Roasted Red Bell Pepper -- chopped
Directions in food processor, combien cheese and yogurt. Whir until smoothe. Stir in scallions and pepper, spread on toast and serve.
Alternative: use as a dip
