Italian   -   Chicken In Blue   adapted from Classic Main Courses

  • 2 Tablespoons Olive Oil
  • 3 Cloves Garlic -- finely chopped
  • 1 Medium Red Bell Pepper -- diced
  • 2 Large Chicken Breasts -- diced
  • Salt And Pepper -- to taste
  • 16 Ounces Small Button Mushrooms -- whole
  • 4 Tablespoons Dry White Wine
  • 2/3 Cup Half And Half
  • 1 Cup Bleu Cheese
  • 2 Scallion -- chopped
  • 2 Tablespoons Parsley -- minced
  • 8 Ounces Spaghetti
Directions Saute in oil, garlic, pepper, chicken, salt and pepper. Cook 20 mintues. or until chicken is lightly brown. Add mushrooms, saute 2 mintues, add wine, bring to boil. Reduce heat to low, make sure mixture ahs stopped boiling. Add cream and cheese. Stir until cheese has melted. Cook pasta as directed. Pour mixture over pasta, sprinkle with scallions and parsley & serve.
