Italian   -   Coda Di Rospo Al Vino Blanco (Monkfish In White Wine)   adapted from Culinaria Italy

  • 4 Medium Monkfish Fillets
  • 1 Medium Onion -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 1 Stalk Celery -- Chopped
  • 1 Teaspoon Rosemary
  • 1/4 Cup Parsley -- Chopped
  • 3 Tablespoons Olive Oil
  • Salt And Pepper -- To Taste
  • Flour
  • 1 Cup White Wine
Directions Saute onion, garlic, celery, rosemary and parsley in oil for 5 mintues. Season fish with salt and pepper. Coat in flour and add to pan. Saute until lightly browned on both side. Place fish mxture into baking dish. Add white wine and bake for 20 minutes at 400 degrees.
Serves 1
