Italian   -   Cranberry Beans With Fusilli   adapted from Versatile Grain and Elegant Bean

Ingredients
  • 1 Pound Cranberry Beans -- Cooked
  • 6 Ounces Italian Sausage -- Crumbled
  • 1 Large Onion -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 2/3 Cup White Wine
  • 1 Can Tomatoes -- Chopped
  • 1 Medium Bay Leaf
  • 1 Teaspoon Oregano
  • 1 Teaspoon Sage
  • 1/2 Teaspoon Rosemary
  • 2 Tablespoons Basil -- Chopped
  • 1 Can Tomato Paste
  • 1/2 Teaspoon Red Pepper Flakes
  • Salt And Pepper -- To Taste
  • 12 Ounces Fusilli Pasta -- Cooked
  • 2 Tablespoons Romano Cheese -- Grated
  • 1 Tablespoon Parsley -- Chopped
Directions Saute meat until browned. Add onions and garlic. Saute for 5 minutes. Add wine and simmer for 2 minutes. Add tomatoes and bring to a boil. Add bay leaf, oregano, sage, rosemary, basil, tomato paste, hot pepper, beans, salt and pepper. Simmer for 10 minutes. Discard bay leaf and add pasta. Sprinkle with parsley and serve.
