Italian   -   Damitasse Blueberry Tortoni   adapted from The Complete Around the World Cookbook

  • 1 Cup Heavy Cream
  • 1/4 Cup Confectioner's Sugar
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Rum Extract
  • 1 Cup Blueberries -- rinsed and drained
  • 1/3 Cup Macaroons -- crisp & crumbled
Directions 1. Combine cream, extracts & sugar in bowl, beat until stiff.
2. Add blueberries and 1/4 cup of crumbs, fold in.
3. Place in Demitasse cups, top with remaining crumbs and a few blueberries for decoration.
4. Wrap and freeze until needed.
5. Serve frozen in demitasse cups on a saucer.
Serves 6
