Italian   -   Dante's Pasta Cake   adapted from A Fresh Taste of Italy by Michele Scicolone

  • Salt -- to taste
  • 1 Pound Spaghetti
  • 6 Large Eggs
  • 1/2 Cup Romano Cheese -- grated
  • Pepper -- to taste
  • 2 Tablespoons Olive Oil
  • 2 Ounces Salami -- chopped
  • 2 Ounces Prosciutto -- chopped
  • 8 Ounces Mozzarella Cheese -- thinly sliced
Directions Cook pasta with salt as directed. Beat egg withbromano and pepper. Drain spaghetti and toss with eggs. Mix well. In a large skillet, heat oil and add half of the spaghetti to the pan. Cover with half the salami and prosciutto. Layer in all the mozzarella. Cover with remaining meats. Top with the rest of the spaghetti. Pour any remaining egg mixture on top. Reduce heat to low. Cook until it forms a cake and stick together about 15 minutes. Flip and allow to cook on other side for 5 minutes and serve.
