Italian   -   Devilled Eggs Artusi   adapted from The Art of Eating Well

  • 6 Large Eggs -- hard Cooked
  • 2 Large Porcini Mushrooms -- finely chopped
  • 2 Tablespoons Butter
  • 2 Tablespoons Fresh Bread Crumbs
  • 3 Tablespoons Parmigiano Reggiano -- grated
  • Parsley -- to taste
  • Salt And Pepper -- to taste
Directions Hard boil the eggs, which takes about 20 minutes of boiling. Put a little vinegar in the water so they shells won't crack. Cool eggs, peel and slice lengthwise, pop out yolks into a bowl. Add remaining ingredients, stirring to make a fine paste. Stuff them back into the white (t tablespoon per egg). Reheat them if desired in oven.(broil 3 minutes).
