Italian   -   Elephant Teeth Pasta   adapted from classic pasta

Description  
Ingredients
  • 1 Pound Denti d' Elefante
  • 3 Tablespoons Olive Oil
  • 4 Cloves Garlic
  • 2 Medium Red Bell Pepper -- chopped
  • 1/2 Pound Swiss Chard -- chopped
  • Salt And Pepper -- to taste
  • 2 Tablespoons Butter
  • 2 Tablespoons Balsamic Vinegar
  • 1/3 Cup Parmigiano-Reggiano Cheese -- grated
Directions 1. Saute garlic in olive oil.
2. Add bell peppers, cook until lightly brown.
3. Add chard & 2 Tbsp water, and salt & pepper.
4. Cook until chard just wilts.
5. Cook pasta as usual.
6. Swirl butter into the sauce.
7. Add cooked pasta & vinegar to pan, combine, add cheese and serve.
Serves 4
