Italian   -   Farfalle Verde With Broccoli In A Spicy Tomato Sauce   adapted from Vegetarian Pasta by Marlena Spieler

  • 4 Cloves Garlic -- finely chopped
  • 1 Medium Red Bell Pepper -- finely chopped
  • 2 Tablespoons Olive Oil
  • 1 Bunch Broccoli -- diced
  • 4 Ounces Peas
  • 1 Can Diced Tomatoes
  • 1/4 Teaspoon Cayenne
  • 1 Teaspoon Thyme
  • 12 Ounces Farfalle
  • Salt -- to taste
  • Parmesan Cheese -- to taste
Directions Saute garlic and red pepper in olive oil, add broccoli and 4 tablespoons of water. Cover and cook over high heat for 3 minutes. Add peas and tomatoes, season with cayenne, thyme and salt. Cook pasta as directed and toss with sauce. Serve with cheese.
