Italian   -   Fennel Mashed Potatoes   adapted from A Fresh Taste of Italy by Michele Scicolone

  • 1 Pound Potatoes -- peeled & cubed
  • 1 Medium Fennel Bulbs -- chopped
  • 2 Tablespoons Olive Oil
  • Pepper -- to taste
Directions Cook potatoes about 20 minutes in cold water. In another pan, combine fennel with wanter and salt. Cover & cook 15 minutes. Drain fennel and puree it in food processor. Drain and mash potatoes. Combine all ingredients and serve.
