Italian   -   Fettuccine Elegante   adapted from The Complete Around the World Cookbook

Ingredients
  • 2 Tablespoons Butter
  • 1 Small Onion -- finely chopped
  • 2 Cloves Garlic -- minced
  • 1 Cup Fresh Mushrooms -- sliced
  • 1/4 Pound Ham -- thinly sliced
  • 1/4 Cup White Wine
  • 1 Cup Parmesan Cheese -- freshly grated
  • 1 Cup Heavy Cream
  • 1/2 Pound Spinach Fettucine -- cooked
  • Parsley -- to garnish
Directions 1. Saute onions, garlic, mushrooms & ham in the butter.
2. Add wine & cream, bring to boil.
3. Add fettuccine and 2/3 cup of cheese, mix until well coated & blended, over medium heat.
4. Serve on plates, top each serving with some of remaining cheese, and garnish with parsley.
Serves 4
