Italian   -   Fettuccine With Butternut And Red Pepper Sauce   adapted from Vegetarian Pasta by Marlena Spieler

  • 1 Medium Onion -- chopped
  • 1 Clove Garlic -- finely chopped
  • 1 Ounce Butter
  • 1 Pound Butternut Squash -- diced
  • 1 Small Red Pepper -- diced
  • 1 Medium Bouillon Cube
  • 1 Cup Water
  • 1 Cup Half And Half
  • 1 Teaspoon Thyme
  • Pepper -- to taste
  • Cayenne -- to taste
  • 12 Ounces Fettucine
  • Parmesan Cheese -- to taste
Directions Saute onion and garlic in butter until soft. Add squash and saute until lightly browned. Add bell pepper and cook for 5 minutes. Add bouillon and water, increase heat and cook until liquid has reduced by 3/4. Add half and half, heat through. Season with thyme, pepper and cayenne. Cook pasta as directed, toss with sauce and top with cheese.
