Italian   -   Fettuccine With Green Olives, Goat Cheese And Thyme   adapted from Vegetarian Pasta by Marlena Spieler

  • 16 Ounces Fettucine
  • 3 Cloves Garlic -- finely chopped
  • 4 Tablespoons Green Olive -- finely chopped
  • 1/2 Teaspoon Thyme
  • 3 Tablespoons Olive Oil
  • 5 Ounces Goat Cheese -- crumbled
  • Red Pepper Flakes -- to taste
  • Salt -- to taste
Directions Cook pasta as directed. Saute garlic, olives and thyme together in olive oil. Do not brown. Drain pasta and toss with the garlic mixture. Add goat cheese and warm until cheese melts in a creamy sauce. Season with red pepper and salt and serve.
