Italian   -   Fettuccine With Prosciutto And Asparagus   adapted from classic pasta

  • 1/2 Pound Asparagus
  • Salt -- to taste
  • 3 Tablespoons Butter
  • 1 Medium Onion -- chopped
  • 4 Ounces Prosciutto -- stripped
  • 1 Cup Half And Half
  • 1/2 Cup Parmesan Cheese -- grated
  • 1 Pound Fettucine
Directions 1. Steam asparagus til tender
2. Reserve half cup water from steaming. cut asparagus into 3/4 inch lengths.
3. cook pasta as directed.
4. melt butter and saute onion and prosciutto.
5. add asparagus cook until lightly colored, pour in reserved water and cook until evaporated.
6. Add cream until liquid is reduced to half.
7. Serve over pasta and top with cheese.
Serves 4
