Italian   -   Filetto Di Maiale Gratinato (Pork Fillet With Herbs)   adapted from Culinaria Italy

  • 1/4 Cup Thyme -- Chopped
  • 1/4 Cup Rosemary -- Chopped
  • 1/4 Cup Marjoram -- Chopped
  • 1/4 Cup Sage -- Chopped
  • 2 Cups Bread Crumbs
  • 1 Cup Romano Cheese -- Grated
  • 3 Tablespoons Olive Oil
  • 4 Pounds Pork Tenderloin -- In 1 Piece
  • Salt And Pepper -- To Taste
  • 2 Medium Eggs -- Beaten
Directions Chop all the herbs together. Add breadcrumbs, cheese and olive oil. Mix well. Season pork with salt and pepper. Coat pork in egg and sprinkle with herb mixture. Saute meat for 3 minutes per side, then transfer to a 320 degree oven for 1 hour. Check temperature of the pork with a thermometer and serve when desired doneness is reached.
