Italian   -   Frittatine De Patate E Zafferano (Saffron Potato Cakes)   adapted from Culinaria Italy

  • 2 Pounds Potatoes -- Boiled And Mashed
  • 1/2 Teaspoon Saffron
  • 3 Tablespoons Olive Oil
  • 3 Large Eggs
  • 2 Tablespoons Parsley -- Chopped
  • Flour
  • Salt And Pepper -- To Taste
Directions Combine potatoes, eggs, parsley, saffron and oil in a bowl. Knead to form a dough. Add more oil or flour as needed to make it come together. Season with salt and pepper. Form into small patties and saute until golden brown on both sides about 5 minutes per side.
Serves 4
