Italian   -   Garlic Stuffed Eggs   adapted from ethnic cuisine

  • 6 Large Eggs -- hard Cooked
  • 1 Tablespoon Butter
  • 1 Tablespoon Olive Oil
  • 4 Cloves Garlic -- smashed
  • 2 Tablespoons Red Wine Vinegar
  • Salt And Pepper -- to taste
  • 3 Tablespoons Parsley -- chopped
Directions Scoop out yolks from halved, boiled eggs. Mash yolks thoroughly. Saute garlic in butter & oil, until garlic just begins to brown, do not burn. Add vinegar to pan, simmer 2 minutes. Cool. Combine with remaining ingredients, mash it in, then stuff egg hollows withit, and refrigerate.
