Italian   -   Genoese Vegetable Soup   adapted from pasta

Ingredients
  • 2 Tablespoons Olive Oil
  • 2 Large Onion -- chopped
  • 2 Large Carrot -- chopped
  • 16 Ounces String Beans -- cut in 1-inch pieces
  • 6 Cups Vegetable Broth
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 3 Cloves Garlic
  • 1 Cup Orzo
  • 1/4 Cup Fresh Basil -- chopped
  • 1/4 Cup Parsley -- chopped
  • 1 Tablespoon Parmesan Cheese -- or pecorino
Directions saute onions til translucent. add carrots and beans. saute for 10 more minutes. Add broth and simmer 15 minutes. Add salt, pepper and garlic and simmer 2 minutes. Add orzo and cook until just tender. add basil and parsley simmer 1 more minute. Serve and garnish with cheese.
