Italian   -   Grilled Pork Tenderloin With Horseradish Sauce   adapted from A Fresh Taste of Italy by Michele Scicolone

  • 2 Pounds Pork Tenderloin
  • 2 Tablespoons Sage -- finely chopped
  • 2 Tablespoons Basil -- finely chopped
  • 2 Tablespoons Chives -- finely chopped
  • 1 Tablespoon Rosemary
  • 1 Medium Bay Leaf
  • 1 Clove Garlic -- finely chopped
  • Pepper -- to taste
  • 4 Tablespoons Olive Oil
  • 1 Piece Horseradish -- grated
  • Salt -- to taste
Directions In a shallow bowl, combine pork with herbs, garlic, pepper and 2 tablespoons of olive oil. Cover and marinate for several hours. Add remaining olive oil to grated horseradish. Set aside. Preheat grill or broiler. Grill pork 20 minutes turning occasionally until brown on all sides. Sprinkle with salt and serve with horseradish sauce.
