Italian   -   Italian Almond Coffee Cake   adapted from Sun-Drenched Cuisine by Marlena Spieler

  • 1 Cup Raw Almonds
  • 1 Cup Flour
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Baking Powder
  • 1/4 Teaspoon Salt
  • 1 Stick Unsalted Butter
  • 1 Cup Sugar
  • 1 Medium Egg
  • 2 Teaspoons Almond Extract
  • 3/4 Cup Sour Cream
  • 1/2 Cup Brandy
  • 1/2 Cup Confectioner's Sugar
  • 3 Tablespoons Milk
  • 1 Cup Toasted Almonds -- sliced
Directions Grind raw almonds in nut grinder to a coarse consistency, set aside. Mix flour, baking soda, baking powder and salt, set aside.
Cream butter and sugar. Add egg, mix well. Add almond extract, sour cream, brandy and ground almonds. Comvbine dry mixture with wet mixture, mix thorooughly. Pour into buttered 9 inch square cake pan. top with sliced almonds and bake at 350* for 40 minutes. Mix confectioners sugar with milk remove cake from oven, pour sugar mixture over cake, return to oven for 5 minutes.
