Italian   -   Italian Chicken Pitas   adapted from Betty Crockers New International Cookbook

  • 1/4 Pound Chicken -- cut in 1-inch pieces
  • 1 Small Zucchini -- sliced
  • 1 Small Carrot -- shredded
  • 1 Small Onion -- ringed
  • 1/4 Teaspoon Basil
  • 1/4 Teaspoon Oregano
  • 1/4 Teaspoon Pepper
  • 1 Medium Tomato -- chopped
  • 3 Pita Bread -- halved
  • 1/3 Cup Mozzarella Cheese -- shredded
Directions Spray pan with nonstick spray. Heat over medium high. stir fry chicken until no longer pink. add remaining ingredients except pita and cheese adding tomato last. stuff mixture in pita and sprinkle with cheese.
