Italian   -   Italian Fennel Soup With White Wine And Tomatoes   adapted from Soup and Bread by Crescent Dragonwagon

Ingredients
  • 5 Cups Chicken Stock
  • 3 Medium Fennel Bulb -- Chopped
  • 2 Cups Dry White Wine
  • 1 Can Tomatoes -- Chopped
  • 2 Tablespoons Olive Oil
  • 2 Large Onion -- Chopped
  • 1 Teaspoon Fennel
  • 4 Cloves Garlic -- Chopped
  • 2 Teaspoons Honey
  • Salt And Pepper -- To Taste
Directions Bring stock to a boil, add fennel and wine. Simmer for 5 minutes. Add tomatoes and simmer for 10 minutes. Saute onions in olive oil for 5 minutes. Add fennel seeds and saute for 5 minutes. Add garlic and saute for 1 minute. Add onion mixture to the soup along with the honey. Simmer for 5 minutes and serve.
