Italian   -   Italian Lentil Loaf   adapted from betty crocker healthy eating

Ingredients
  • 1 Cup Lentils -- cooked
  • 1/4 Cup Dry Bread Crumbs
  • 1/4 Cup Fresh Parsley -- chopped
  • 1/2 Teaspoon Italian Seasoning
  • Salt And Pepper -- to taste
  • 1/2 Teaspoon Garlic
  • 1 Egg
  • 1 Medium Onion -- finely chopped
  • 1 Large Tomato -- chopped
  • 1/4 Cup Mozzarella Cheese -- shredded
  • Ketchup -- if desired
Directions Preheat oven to 350*.
Mix all ingredients except cheese and ketchup.
Spray loaf pan with non-stick spray and fill with lentil mixture.
Bake 30-40 minutes until golden brown.
Romove from oven, top with cheese, let stand 5 minutes.
Serve with ketchup if desired.
Serves 6
