Ingredients
  • 6 Large Red Delicious Apples -- peeled & grated
  • 1/2 Lemon Lemon Rind -- grated
  • 12 Macaroon Cookies -- crushed
  • 1/4 Cup Sugar
  • 2 Tablespoons Flour
  • 1 Pinch Salt
  • 1/2 Teaspoon Nutmeg
  • 4 Eggs -- slightly beaten
  • 1/4 Teaspoon Almond Extract
  • 4 Teaspoons Angostura Bitters
  • 3/4 Cup Milk
  • 1 Teaspoon Butter -- softened
  • Almonds -- blanched
  • Maraschino Cherries
  • Whipped Cream -- (optional)
Directions 1. Place grated apples in a bowl, add lemon rind, cookie crumbs, sugar, salt, flour, nutmeg, eggs, almond extract, bitter and mix thoroughly.
2. Stir in milk, blend well.
3. Place in well-greased 8 inch baking dish, dot top with butter.
4. bake in 325* oven for 2 hours, or until knife inserted in ceneter comes out clean. Should be consistency of thick pudding.
5. Chill and decorate with almonds & cherries. Serve with whipped topping if desired.
