Italian   -   Jota   adapted from Culinaria Italy

  • 2 Cups Lima Beans -- Cooked
  • 2 Pounds Potatoes -- Cubed
  • 10 Ounces Bacon -- Chopped
  • 1 Cup Sauerkraut
  • 1 Medium Bay Leaf
  • 3 Tablespoons Olive Oil
  • 1 Clove Garlic -- Chopped
  • 2 Tablespoons Flour
  • Salt And Pepper -- To Taste
  • 4 Cups Chicken Broth
Directions Saute bacon and garlic in oil until bacon is crisp. Add sauerkraut and bay leaf. Saute for 3 minutes. Add flour and stir well. Add broth, salt, pepper and potatoes. Bring to a boil and simmer for 20 minutes. Add beans and simmer until warmed through. Serve.
