Italian   -   Lenticchie Con Salsicce (Lentils With Sausages)   adapted from Culinaria Italy

Ingredients
  • 2 Cups Lentils
  • Salt -- To Taste
  • 4 Slices Bacon -- Chopped
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Butter
  • 1 Medium Onion -- Chopped
  • 1 Stalk Celery -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 4 Cups Beef Broth
  • 2 Pounds sausage links -- Sliced
  • Pepper -- To Taste
Directions Saute bacon in oil and butter until browned. Add onion and celery, saute for 5 minutes. Add lentils, tomatoes and stock. Cover and simmer for 30 minutes. Saute sausage until browned. Add to soup along with salt and pepper. Simmer for 5 minutes and serve.
Serves 4
