Italian   -   Lima Beans Ala Napolitana   adapted from bean banquet

  • 1 Pound Frozen Lima Beans
  • 1 Small Onion -- chopped
  • 2 Cloves Garlic
  • 1/4 Teaspoon Crushed Red Pepper
  • 3 Tablespoons Olive Oil
  • 2 Cups Stewed Red Ripe Tomatoes
  • 1 1/2 Cups Broth
  • 1 Tablespoon Fresh Basil -- chopped
  • 4 Tablespoons Fresh Parsley -- chopped
  • Salt And Pepper -- to taste
  • 1 Cup Parmesan Cheese -- grated
Directions saute onion, garlic and red pepper in oil until lightly brown. add tomatoes, broth, and remaining spices. simmer 15 minutes. add lima beans cook until heated through. serve topped with cheese.
