Italian   -   Meat Ravioli   adapted from classic pasta

  • 4 Tablespoons Butter
  • 1 Medium Onion -- chopped
  • 1 Pound Ground Beef
  • 2 Pounds Plum Tomatoes -- chopped
  • Salt And Pepper -- to taste
  • 4 Ounces Mozzarella Cheese -- diced
  • 1 Cup Ricotta Cheese
  • 1/4 Teaspoon Nutmeg
  • 1 Egg Yolk
  • Pasta Dough
  • 1 Cup Parmigiano-Reggiano Cheese -- grated
Directions 1. Saute onion in butter until brown.
2. Add beef, tomatoes, salt & pepper, simmer 40 minutes.
3. Remove from heat, allow to cook completely.
4. Add everything but dough, combine.
5. Drop in 1/2 teaspoonfuls on pasta sheet, paint edges with eggwash, top with other pasta sheet, cut out with cookie cutter. crimp edges with fork to secure.
7. Place some of desired sauce on bottom of pan, put ravioli's, top with remaining sauce.
8. Bake preheated 400* oven for 20 minutes in baking pan.
