Italian   -   Mediterranean White Beans   adapted from The Occasional Vegetarian

  • 1 Tablespoon Olive Oil
  • 4 Stalks Celery -- chopped
  • 8 Cloves Garlic -- finely chopped
  • 10 Medium Roma Tomato -- chopped
  • 1 Tablespoon Fresh Oregano
  • 1 Tablespoon Sage -- fresh
  • 1 Tablespoon Thyme -- fresh
  • 1 Cup Parsley
  • 1/2 Teaspoon Sugar
  • Salt And Pepper -- to taste
  • 2 1/2 Cups White Beans, Cooked
Directions heat oil in heavy saucepan. add celery and saute for 10 minutes. add garlic and saute until the celery is cooked but still firm and garlic begins to color about 5 minutes. add tomatoes and cook for 10 minutes. add remaining ingredients. Simmer for 5 minutes. If too liquidy raise heat and evaporate most of the water.
