Italian   -   Milan Chickpea Soup   adapted from contadina

  • 6 Ounces Tomato Paste
  • 4 Cups Chicken Broth
  • 3 1/2 Cups Chickpeas
  • 1/2 Pound Ground Beef -- cooked
  • 1 Teaspoon Italian Seasoning
  • 8 Ounces Mushroom -- sliced
  • 1 Large Onion -- sliced
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 1/2 Teaspoon Marjoram
  • 2 Teaspoons Parmesan Cheese
Directions In Saucepan, combine tomato paste and water, stir until well blended.
saute beef until brown. drain grease. add all ingredients including beef to saucepan, except parmesan. Boil, reduce heat, cover, simmer 30 minutes. sprinkle with cheese before serving.
