Italian   -   Minestra Di Pasta E Fagioli Alla Siciliana   adapted from Soups of Italy by Norma Wasserman-Miller

  • 3 Tablespoons Olive Oil
  • 3/4 Cup Pancetta -- Diced
  • 1 Large Onion -- Thinly Sliced
  • 2 Cups Borlotti Beans -- Soaked Overnight
  • 7 Cups Chicken Broth
  • 1 Teaspoon Salt
  • 3 Cups Cauliflower -- Chopped
  • Salt And Pepper -- To Taste
  • 6 Ounces Taglitelle
Directions Saute onion and pancetta in oil until onion is golden. Add beans and chicken broth. Bring to a boil, reduce heat, cover and simmer for 1 hour. Add salt and cauliflower. Simmer for 10 minutes. Season with salt and pepper. Add pasta and simmer for 8 minutes or until pasta is al dente.
