Italian   -   Minestrone   adapted from Betty Crockers New International Cookbook

Ingredients
  • 1 Cup Water
  • 1/2 Cup Dried Kidney Beans
  • 4 Cups Chicken Broth
  • 2 Small Tomatoes -- chopped
  • 2 Medium Carrot -- chopped
  • 1 Stalk Celery -- chopped
  • 1 Onion -- chopped
  • 1 Clove Garlic -- chopped
  • 1/2 Cup Macaroni -- uncooked
  • 1 Tablespoon Parsley
  • 1 Teaspoon Salt
  • 1 Teaspoon Basil
  • 1/2 Teaspoon Pepper
  • 1 Bay Leaf
  • 3/4 Cup Green Beans
  • Parmesan Cheese -- garnish
Directions Heat water and dried beans to boiling in dutch oven. Boil 2 minutes. Soak for 1 hour. Heat to boiling, cover and simmer 1 to 1 1/2 hours. Add all but green beans. Return to boil, then reduce heat, cover and simmer for 15 minutes. Add green beans, simmer 15 more minutes. Sprinkle with cheese and serve.
