Italian   -   Mushroom Antipasto   adapted from The Complete Around the World Cookbook

Ingredients
  • 3 Pounds Mushrooms
  • 2 Cups Water
  • 2 Cups Celery -- thinly sliced
  • 1 Can Black Olives -- drained & chopped
  • 1 Tablespoon Parsley -- chopped
  • 1 Jar Green Olives -- drained & chopped
  • 2 Cloves Garlic -- mashed
  • 1 1/2 Teaspoons Black Pepper -- ground
  • 1/2 Cup Olive Oil
  • 1/4 Cup White Vinegar
Directions 1. Rinse, dry and slice mushrooms (makes about 15 cups).
2. Put water in saucepan, bring to boil.
3. Add mushrooms, cover & simmer 5 minutes.
4. Drain & rinse quickly with cold water, dry with paper towels.
5. Place mushrooms in large mixing bowl, add remaining ingredients and toss gently.
6. Cover and chill thoroughly.
Serves 6
