Italian - Mushroom Antipasto

Ingredients
|
- 3 Pounds Mushrooms
- 2 Cups Water
- 2 Cups Celery -- thinly sliced
- 1 Can Black Olives -- drained & chopped
- 1 Tablespoon Parsley -- chopped
- 1 Jar Green Olives -- drained & chopped
- 2 Cloves Garlic -- mashed
- 1 1/2 Teaspoons Black Pepper -- ground
- 1/2 Cup Olive Oil
- 1/4 Cup White Vinegar

Directions
|
1. Rinse, dry and slice mushrooms (makes about 15 cups). 2. Put water in saucepan, bring to boil. 3. Add mushrooms, cover & simmer 5 minutes. 4. Drain & rinse quickly with cold water, dry with paper towels. 5. Place mushrooms in large mixing bowl, add remaining ingredients and toss gently. 6. Cover and chill thoroughly.
