Italian   -   Mushroom Frittate(Italy)   adapted from The Art of Food Processor Cooking

  • 1 1/2 Ounces Parmesan Cheese -- grated
  • 4 Medium Eggs
  • 2 Medium Egg Yolks
  • 2 Tablespoons Whipping Cream
  • Pepper -- to taste
  • 2 Tablespoons Olive Oil
  • 2 Ounces Mushroom -- sliced
Directions add eggs, yolks, cream and pepper and beat until combined. Heat the broiler on high setting. Place oil in omelet pan. When oil is very hot, pour in the egg mixture. Swirl eggs gently until edges set, continuing swirling so that omelet moves freely in pan. when the omelet is done enough so that the center is still liquid. sprinkle with cheese and mushrooms. Place pan under broiler, so that the omelet puffs and top browns. Slide off onto plate and serve immediately.
