Italian   -   Orecchiette O Cavatieddi With Tomatoes And Arugula   adapted from Vegetarian Pasta by Marlena Spieler

  • 1 Pound Spaghetti
  • 6 Ounces Arugula -- chopped
  • 8 Medium Shallot -- finely chopped
  • 2 Tablespoons Olive Oil
  • 1 Can Diced Tomatoes
  • Salt And Pepper -- to taste
  • Red Pepper Flakes -- to taste
Directions Cook pasta as directed. Add arugula during last minute of pasta cooking time. Drain and reserve. Meanwhile, saute shallots in olive oil. Add tomatoes. Cook over high heat until the sauce thickens. Then season with salt and pepper and red pepper flakes. Toss pasta and arugula with tomato sauce and serve.
