Italian   -   Pasta Agrodolce   adapted from Vivid Flavors

  • 10 Cloves Garlic -- roasted
  • 1 Large Red Onion -- roasted
  • Olive Oil -- for roasting
  • 2 Pounds Roma Tomato -- chopped
  • 2 Tablespoons Balsamic Vinegar
  • Salt And Pepper -- to taste
  • 1 Pound Spaghettini -- cooked
  • Parmesan Cheese -- to taste
Directions peel and mash roasted garlic. peel and chop the onion. place garlic, onion and tomatoes in a skillet and fry until most of the liquid evaporates. add vinegar and cook for 2 more minutes. add salt and pepper. Serve of pasta and apply parmesan cheese liberally.
