Italian   -   Pasta E Fagioli Alla Clementina   adapted from Sarah Leah Chase's Cold-Weather Cooking

  • 2 Cups Kidney Beans -- Cooked
  • 1/2 Pound Pork -- Cubed
  • 1 Medium Onion -- Chopped
  • 2 Cans Tomatoes -- Chopped
  • 1 Cup Acini Pepe Or Other Small Pasta
  • Salt And Pepper -- To Taste
  • Olive Oil
  • Parmesan Cheese
  • 4 Cups Chicken Broth
Directions Place pork and onion in stock pot and saute slowly for 30 minutes until very browned. Add beans, tomatoes, salt, pepper and broth. Bring soup to a simmer for 30 minutes. Add pasta and simmer for 10 minutes. Serve drizzled with olive oil and cheese.
