Italian   -   Pasta Stew With Cannellini Beans And Black Olive Sauce   adapted from Vegetarian Pasta by Marlena Spieler

  • 6 Ounces Short Macaroni
  • 1 Medium Onion -- thinly sliced
  • 1 Medium Carrot -- diced
  • 2 Cloves Garlic -- finely chopped
  • 1 Can Cannellini Beans
  • 1 Can Diced Tomatoes
  • 2 Tablespoons Parsley -- finely chopped
  • 2 Cups Vegetable Broth
  • Salt And Pepper -- to taste
  • 1 Clove Garlic -- finely chopped
  • 1 Teaspoon Rosemary
  • 3 Dozen Black Olives -- blended into a paste
  • 3 Tablespoons Olive Oil
Directions Cook pasta as directed. Drain and rinse with cold water. Set aside. Saute onion, carrot, and garlic until softened. Add beans, tomatoes, parsley and broth. Simmer for 10 minutes. Season with salt and pepper. Blend remaining ingredients together. Add pasta to the stew and heat through. Add olive paste and serve.
