Italian   -   Penne With A Spicy Tomato Sauce (Allarrabbiata)   adapted from classic pasta

Description  
Ingredients
  • 1/2 Cup Olive Oil
  • 3 Cloves Garlic
  • 2 Pounds Plum Tomatoes -- diced
  • Salt -- to taste
  • 1/4 Cup Fresh Basil -- OR ***
  • 2 Tablespoons Dried Basil -- reconstituted
  • 1/4 Teaspoon Red Pepper Flakes
  • 1 Pound Penne
  • 2 Ounces Pancetta -- diced
  • 1/2 Cup Romano Cheese
Directions 1. Saute the garlic & pancetta in oil until it begins to change color.
2. Add tomatoes, red pepper and salt.
3. Simmer 35 minutes.
4. Add basil , cook for 2 more minutes.
5. Cook penne as usual.
6. Combine, top with cheese and serve.
Serves 4
