Italian - Penne With A Spicy Tomato Sauce (Allarrabbiata)

Ingredients
|
- 1/2 Cup Olive Oil
- 3 Cloves Garlic
- 2 Pounds Plum Tomatoes -- diced
- Salt -- to taste
- 1/4 Cup Fresh Basil -- OR ***
- 2 Tablespoons Dried Basil -- reconstituted
- 1/4 Teaspoon Red Pepper Flakes
- 1 Pound Penne
- 2 Ounces Pancetta -- diced
- 1/2 Cup Romano Cheese

Directions
|
1. Saute the garlic & pancetta in oil until it begins to change color. 2. Add tomatoes, red pepper and salt. 3. Simmer 35 minutes. 4. Add basil , cook for 2 more minutes. 5. Cook penne as usual. 6. Combine, top with cheese and serve.
