Italian - Penne With Mushrooms, Leeks And Sun-Dried Tomatoes

Ingredients

- 1 Cup Sun-Dried Tomatoes -- Chopped
- 3 Cloves Garlic -- Chopped
- 2 Cups Chicken Broth
- 2 Tablespoons Olive Oil
- 3 Large Leek -- Chopped
- 1 Teaspoon Salt
- 1 Pound Mushrooms -- Sliced
- 1/4 Pound Shiitake Mushrooms -- Sliced
- 1 Pound Penne
- 1/4 Cup Romano Cheese -- Grated
- Parsley -- Chopped

Directions
|
Combine tomatoes, garlic, and broth in a pan and bring to a boil. Cover and simmer for 5 minutes. Set aside. Saute leeks in oil for 5 minutes. Sprinkle with salt, add mushrooms and simmer for 10 minutes. Cook pasta a directed. Add tomato mixture to leek mixture. Simmer for 5 minutes. Drain pasta and stir in cheese. Mix well. Add tomato mixture, stir well. Serve sprinkled with parsley.
