Italian   -   Penne With Tomato, Sage And Parmigiano   adapted from A Fresh Taste of Italy by Michele Scicolone

  • 2 Tablespoons Olive Oil
  • 1 Can Plum Tomatoes -- chopped
  • 4 Leaves Sage -- finely chopped
  • Salt And Pepper -- to taste
  • 1 Pound Penne
  • 2 Tablespoons Unsalted Butter
  • 2 Teaspoons Balsamic Vinegar
  • 3/4 Cup Parmesan Cheese -- grated
Directions In saucepan, combine oil, tomatoes, sage, salt and pepper. Bring to a simmer over low heat. Cook, stirring occasionally until the sauce is thick about 20 minutes. Cook pasta as directed. Remove the sauce from the heat and stir in butter and vinegar. Add pasta to sauce and stir well. Add cheese and stir again. Serve.
