Italian   -   Pesto Mushrooms   adapted from Garlic Lovers Cookbook II

  • 1 Lb Mushrooms -- large
  • 6 Ounces Feta Cheese -- crumbled
  • 2 1/2 Cups Fresh Basil
  • Or
  • 2 1/2 Cups Fresh Spinach
  • 3 Tablespoons Dried Basil
Directions 1 Cup Parmesan Cheese -- grated
3 Cloves Garlic
1/3 Cup Olive Oil
stuff mushroom caps with feta cheese, set aside. Place remaining ingredients in food processor or blender and puree. Top each mushroom with 1 Tablespoon pesto sauce each. Bake at 375* for 15 minutes.
Serves 6
