Italian   -   Pollo In Potacchio (Roast Chicken With Onions)   adapted from Culinaria Italy

  • 3 Tablespoons Olive Oil
  • 1 Small Onion -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 4 Pounds Chicken -- In Large Pieces
  • 1 Medium Jalapeno -- Chopped
  • Salt And Pepper -- To Taste
  • 1 Can Tomato Paste
  • 1 Cup Dry White Wine
  • 1 Tablespoon Rosemary
  • 1 Cup Chicken Stock
Directions Saute onions and garlic in oil for 5 minutes. Add chicken and jalapeno. Season with salt and pepper and brown chicken on all sides. Mix tomato paste with wine and add to the pot. Bring to a boil. Cover, reduce heat and simmer for 30 minutes. Add stock and rosemary. Simmer for another 10 minutes or until stock is reduced to 1/4. Serve.
