Italian   -   Quick Tortellini And Spinach Soup   adapted from Sarah Leah Chase's Cold-Weather Cooking

Ingredients
  • 2 Tablespoons Olive Oil
  • 2 Ounces Pancetta -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 1 Medium Onion -- Chopped
  • 9 Cups Chicken Broth
  • 1 Teaspoon Basil
  • 1 Teaspoon Oregano
  • 1 Package Spinach Tortellini
  • 2 Cans Tomatoes -- Chopped
  • 8 Ounces Spinach -- Chopped
  • Salt And Pepper -- To Taste
  • Parmesan Cheese
Directions Saute pancetta, garlic and onion in oil for 15 minutes. Add broth, basil and oregano. Bring to a boil, add pasta and simmer for 10 minutes. Add tomatoes, simmer 5 minutes. Add spinach, simmer for 3 minutes. Season with salt and pepper. Serve with the parmesan.
