Italian   -   Rice And Sausages   adapted from The Art of Eating Well

Ingredients
  • 2 Tablespoons Olive Oil
  • 1 Small Onion -- finely chopped
  • 1/2 Pound Smoked Sausage -- finely chopped
  • 1/2 Cup Dry White Wine
  • 1 1/2 Quarts Chicken Broth
  • 1 Cup Rice
  • 1/2 Head Cabbage -- shredded
  • 1 Large Turnip -- shredded
  • 1/2 Cup Parmigiano -- grated
  • 2 Tablespoons Fresh Parsley -- finely chopped
Directions Saute onion and sausage in oil until brown. Add wine and simmer until wine evaporates. Pour in stock, rice and vegetables. Simmer 20 minutes or until rice is done. Stir in cheese & parsley and serve.
Serves 4
